This is the recipe for our favorite coffee snack, the banana cake, which we often serve together with our coffee at markets, on our coffee walk or when we have visitors at the office. Many people have requested the recipe, so we thought it a good idea to just post it here on the blog:
Makes 2 cakes

| In Tanzania you don't need to go far to get good bananas. These ones are super local from the office backyard! |
- ½kg sugar
- ½kg margarine/butter
- 6 eggs
- 6 big bananas or 10 small
- ½kg flour
- 1½-teaspoon cinnamon
- 1½-teaspoon baking powder
Instructions:
- Preheat the oven to 175*C
- Mix margarine/butter with sugar
- Mash the bananas well and mix them together with the rest
- Mix in the eggs
- Mix in the flour
- Mix in cinnamon and baking powder
- Pour into two greased and floured loaf pans
- Bake in oven at 175*C for about 45min. Since all ovens are different the temperature and time may vary.
