The Banana Cake

This is the recipe for our favorite coffee snack, the banana cake, which we often serve together with our coffee at markets, on our coffee walk or when we have visitors at the office. Many people have requested the recipe, so we thought it a good idea to just post it here on the blog:

Makes 2 cakes

In Tanzania you don't need to go far to get good bananas.
These ones are super local from the office backyard!
Ingredients:
  • ½kg sugar
  • ½kg margarine/butter
  • 6 eggs
  • 6 big bananas or 10 small
  • ½kg flour
  • 1½-teaspoon cinnamon
  • 1½-teaspoon baking powder

Instructions:
  1. Preheat the oven to 175*C
  2. Mix margarine/butter with sugar
  3. Mash the bananas well and mix them together with the rest
  4. Mix in the eggs
  5. Mix in the flour
  6. Mix in cinnamon and baking powder
  7. Pour into two greased and floured loaf pans
  8. Bake in oven at 175*C for about 45min. Since all ovens are different the temperature and time may vary.
  9. Enjoy!

And remember, the banana cake goes very well together with a fresh cup of
(Kahawa – Fair Trade) coffee!!

Computer Lessons

Amani, who was on an exchange with Fredskorpset to Norway last year, has lately been holding computer lessons for the Aranga Coffee Group. The farmers want to learn how to use a computer for several reasons, it will for example be easier for them to communicate with other farmers, Tanzania Coffee Research Institute and to learn more about coffee production and the coffee market. It will also be useful in the on-going project of becoming Fair Trade and Organic certified.

We were able to buy a computer and give lessons to the Aranga Coffee Group through Amani's following-up program after his exchange. He is teaching them basic computer skills, such as how to use the Internet, send e-mails and use programs like Microsoft Word, Excel and Power Point.

Amani says the farmers are doing well in class!
